Description

Tortellini Caprese Salad is a delightful twist on the classic Italian dish, perfect for warm weather and gatherings year-round. This vibrant salad combines cheesy tortellini, juicy cherry tomatoes, fresh basil, and creamy mozzarella pearls, all drizzled with a zesty balsamic glaze.


Ingredients

  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves (minced)
  • 3/4 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add cheese tortellini and cook according to package instructions until al dente. Drain using a colander and rinse with cool water.
  2. While the tortellini cools, chop spinach, cherry tomatoes, basil, and garlic.
  3. In a large mixing bowl, combine cooled tortellini with chopped ingredients and drizzle with olive oil and balsamic vinegar. Season with Italian seasoning, salt, and pepper.
  4. Gently toss everything together until well mixed. Chill in the refrigerator until ready to serve.
  5. Before serving, give the salad another toss and drizzle with balsamic glaze if desired.
