- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 6 tablespoons salted butter (for caramel)
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy whipping cream (divided)
- 1¼ cups milk or dark chocolate
Instructions
- Preheat oven to 350°F (175°C). Prepare a greased 9×13 inch baking pan.
- For the shortbread base, cream together room temperature butter and powdered sugar until fluffy. Mix in flour and vanilla until dough forms. Press into the pan and bake for 20 minutes until golden.
- For the caramel layer, combine salted butter, corn syrup, sugar, and half of the cream in a saucepan over medium heat. Stir continuously until melted; then boil gently for about 5 minutes without stirring.
- Remove from heat and stir in vanilla. Pour the caramel over the baked shortbread and refrigerate for an hour until set.
- Melt chocolate with remaining cream in a microwave-safe bowl. Pour over chilled caramel layer and chill again for another hour before cutting.
