Ingredients
- 12 ounces penne pasta (or gluten-free pasta)
- ¾ cup raw cashews
- 2 tablespoons olive oil
- ½ medium red onion
- 1 large carrot
- 1 medium red bell pepper
- 2 cups broccoli florets
- 1½ cups cherry tomatoes
- 2 medium zucchini
- 2 cloves garlic
- Fresh lemon juice
Instructions
- Soak the cashews for at least 2 hours in warm water. Drain and set aside.
- In a blender, combine soaked cashews, water, lemon juice, garlic, salt, onion powder, and black pepper; blend until smooth.
- Cook the pasta according to package instructions until al dente.
