- 1 large onion (diced)
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 2 cans great Northern beans (14 oz each, drained)
- 2 cans mild green chiles (4 oz each, with juices)
- 1 pound boneless skinless chicken breasts (diced)
- 1 cup corn kernels
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- ⅓ cup sour cream
Instructions
- In a large pot over medium-high heat, heat olive oil and sauté diced onions for about 4 minutes until softened. Add minced garlic and cook for another 30 seconds.
- Stir in chicken broth, great Northern beans, green chiles (with juices), diced chicken, corn, chili powder, cumin, oregano, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover the pot and let simmer for 10 minutes until the chicken is cooked through.
- In a small bowl, mix sour cream with about ½ cup of hot chili until smooth. Stir this mixture back into the pot to combine thoroughly.
