Description

Baked feta potatoes are a delicious and innovative side dish that combines crispy roasted potatoes with creamy, baked feta cheese. Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes, then par-boil them in water for 6-8 minutes. Drain and let steam dry.
  3. Combine par-boiled potatoes in a baking dish with olive oil, thyme, oregano, salt, pepper, and toss to coat.
  4. Roast in the oven for about 30โ€“40 minutes until golden and crispy.
  5. Add the block of feta to the center of the dish and squeeze half a lemon over it.
  6. After roasting, remove garlic, squeeze out cloves, mash them, then mix with the remaining lemon juice and fresh basil.
  7. Stir this mixture into the roasted potatoes along with the feta.
  8. Drizzle honey over everything before serving.
