Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into chunks
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 red onion cut into chunks
  • 1 red bell pepper cut into chunks
  • 1 green bell pepper cut into chunks
  • Wooden skewers soaked in water for 30 minutes

Instructions

  • In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  • Add the chicken chunks to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken onto soaked skewers, alternating with pieces of red onion and bell peppers.
  • Grill the skewers for 8–10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender with slight char.
