  • 1 pound 500g asparagus, woody ends trimmed
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon garlic finely minced (about 4 cloves)
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 1/4 cups mozzarella cheese finely shredded

Instructions

  • Preheat your oven to 425°F (220°C). Lightly spray a baking sheet with nonstick cooking oil.
  • Arrange the asparagus spears in a single layer on the prepared baking sheet.
  • In a small bowl, combine the olive oil, minced garlic, salt, and black pepper.
  • Drizzle the mixture evenly over the asparagus, tossing to coat thoroughly.
