Ingredients

  • 1 lb ground breakfast sausage turkey sausage used
  • 12 eggs
  • 16 oz cottage cheese about 2 cups
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • Pinch of salt
  • 2 cups chopped spinach
  • 1 cup quartered cherry tomatoes

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground sausage, breaking it into crumbles as it browns. Set aside to cool slightly.
  • In a blender or with an immersion blender, blend the eggs, cottage cheese, garlic powder, onion powder, black pepper, and salt until smooth.
  • Pour the blended egg mixture into a greased or parchment-lined 9×13-inch baking pan.
  • Stir in the cooked sausage, chopped spinach, and cherry tomatoes. Mix gently to distribute evenly.
  • Bake for 40–42 minutes, or until the eggs are fully set. A knife or toothpick inserted in the center should come out clean.
  • Let cool slightly before slicing and serving.
