- 1 lb ground breakfast sausage turkey sausage used
- 12 eggs
- 16 oz cottage cheese about 2 cups
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp black pepper
- Pinch of salt
- 2 cups chopped spinach
- 1 cup quartered cherry tomatoes
Preheat oven to 350°F (175°C).
In a skillet over medium heat, cook the ground sausage, breaking it into crumbles as it browns. Set aside to cool slightly.
In a blender or with an immersion blender, blend the eggs, cottage cheese, garlic powder, onion powder, black pepper, and salt until smooth.
Pour the blended egg mixture into a greased or parchment-lined 9×13-inch baking pan.
Stir in the cooked sausage, chopped spinach, and cherry tomatoes. Mix gently to distribute evenly.
Bake for 40–42 minutes, or until the eggs are fully set. A knife or toothpick inserted in the center should come out clean.
