For the Pasta:
- 12 oz whole wheat pasta penne or tortiglioni
- For the Chicken:
- 1 lb boneless skinless chicken breast, cut into pieces
- 2 tablespoons olive oil
- Salt and black pepper to taste
For the Sauce:
- 3 cloves garlic minced
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- ½ cup chicken broth or reserved pasta water
- ½ cup heavy cream optional

- 2 cups fresh spinach or kale optional
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta until al dente according to package instructions.
Reserve ½ cup of pasta water, then drain and set aside.
Prepare the Chicken:
Heat olive oil in a large skillet over medium heat.

Remove the chicken from the skillet and set aside.

Add Italian seasoning, red pepper flakes, salt, and black pepper. Mix well.

Adjust the sauce consistency with reserved pasta water if needed.
