Garlic Butter Steak Bites and Potatoes

- ¼ cup ghee or butter divided
- 1 tablespoon olive oil
- 1 pound Yukon gold potatoes cut into ½-inch cubes
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt plus more to taste
- ¼ teaspoon ground black pepper plus more to taste
- 1¼ pounds sirloin steak cut into ½-inch cubes
- Fresh parsley chopped (for garnish)
Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of the ghee or butter.
Once the ghee is melted, add the potatoes to the skillet. Sprinkle with minced garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes without stirring, then continue cooking, stirring every 1–2 minutes, for about 8–10 minutes until the potatoes are golden brown and fork-tender. Remove potatoes and any browned bits from the pan and set aside.
Increase heat to medium-high. Add the remaining 2 tablespoons of ghee to the pan. Once melted, add the steak cubes. Season with a bit of salt and pepper. Cook undisturbed for 2 minutes to develop a good sear, then stir and cook for another 1–2 minutes until browned and cooked to your liking.
Return the potatoes to the pan and stir to combine with the steak bites. Taste and adjust seasoning as needed.
Garnish with chopped parsley and serve immediately.
You can substitute Yukon golds with red or fingerling potatoes.
