Ingredients

  • 1/2 cup 1 stick unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon extract
  • 1 21 oz can lemon pie filling

Instructions

  • Preheat the oven to 350°F (175°C).
  • Place the butter in a 9x9-inch baking dish and set it in the oven for 3–4 minutes, just until melted. Remove from oven and set aside.
  • In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
  • Pour the batter over the melted butter in the baking dish. Do not stir.
  • Spoon the lemon pie filling evenly over the top of the batter.
  • Bake for 45–55 minutes, or until the edges are golden brown and the center is set.
  • Let cool slightly before serving. Enjoy warm!

Notes

To make it gluten-free, substitute all-purpose flour with a 1:1 gluten-free flour blend.
Delicious served with vanilla ice cream or whipped cream.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
