- 1/2 cup 1 stick unsalted butter
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 cup buttermilk
- 1 tablespoon vanilla extract
- 1 tablespoon lemon extract
- 1 21 oz can lemon pie filling
Preheat the oven to 350°F (175°C).
Place the butter in a 9x9-inch baking dish and set it in the oven for 3–4 minutes, just until melted. Remove from oven and set aside.
In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Stir in the buttermilk, vanilla extract, and lemon extract until just combined.
Pour the batter over the melted butter in the baking dish. Do not stir.
Spoon the lemon pie filling evenly over the top of the batter.
Bake for 45–55 minutes, or until the edges are golden brown and the center is set.
Let cool slightly before serving. Enjoy warm!
To make it gluten-free, substitute all-purpose flour with a 1:1 gluten-free flour blend.
