Ingredients

  • 8 oz dried pasta of choice
  • 1 tablespoon olive oil
  • ½ cup onion finely chopped
  • 3-4 cloves garlic minced
  • 1 tablespoon butter
  • 1 pound chicken breasts cut into bite-size pieces
  • ½ teaspoon each Italian seasoning smoked paprika, red pepper flakes, garlic powder, salt, and pepper
  • 1 cup heavy cream can substitute half-and-half for a lighter version
  • ½ cup Parmesan cheese grated
  • ½ cup sun-dried tomatoes chopped
  • Fresh basil leaves for garnish

Instructions

  • Cook the Pasta: Cook pasta according to package instructions. Drain and set aside.
  • Sauté Onions and Garlic: Heat olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic. Sauté until fragrant, about 2-3 minutes.
  • Cook the Chicken: Add butter to the skillet, followed by the chicken pieces. Season with Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  • Make the Sauce: Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.
  • Add Tomatoes and Pasta: Stir in the sun-dried tomatoes and cooked pasta. Toss until everything is evenly coated in the creamy sauce.
  • Serve: Garnish with fresh basil leaves and serve immediately.

Notes

Lighter Option: Substitute heavy cream with half-and-half for a less rich sauce.
